Creamy Fajita Chicken Sausages

If you always walk past chicken sausages in the supermarket this is your sign to pick them up and try them in this dish! They’re quick and easy and a nice change from regular sausages too. This actually came about because we wanted fajitas but didn’t have any wraps, only lots of potatoes but I’m so glad we’ve been having it every other week ever since!

Method

1. Start by slicing your chicken sausages and cook this in a tablespoon of oil with the chorizo for around 10 minutes until cooked (when the sausage changes colour)
2. Add in the peppers and onion on a medium heat and fry until soft
3. Turn the heat down slightly and add the cream and chicken stock and mix and leave to simmer until the sauce has thickened. I also added a little handful of Parmesan which I forgot to film, this is optional but was yummy!
4. If you’re worried about the chicken sausages not being cooked you can also remove them at this point and pop them in the air fryer while the sauce thickens
5. Top with some coriander and serve

Molly served this with mash and green beans, but this is so nice with pasta too!

Ingredients

For 2 people you'll need:

6x Porky Whites Premium Chicken Sausages
75g diced chorizo
1x red onion diced
2x red peppers diced
1/2 sachet of fajita seasoning - if you don’t have this use 1 teaspoon garlic granules, 1 teaspoon cumin, 1/2 teaspoon paprika, 1 teaspoon Cajun seasoning
100ml light double cream
150ml chicken stock
Optional extra: add in a handful of Parmesan
