This was one of the best things to ever come out the slow cooker and I absolutely love cooking with the slow cooker so that’s a big thing to say! It was so tasty, loaded with veg and made an absolutely huge portion packed full of goodness! It’s got all the best flavours of the marry me recipes and the risotto soaks all of this up! I used sausage but I’ve made this with chicken before and also just made it on its own and had it with salmon so anything works but the sausage is now a firm fav!
1. Start by breaking up and frying off your sausage and add this to the slow cooker
2. If you’re using chicken skip the above step and add your diced chicken breast (300g) straight to the slow cooker
3. Also add your diced veggies, seasoning and 200ml of stock to the slow cooker. Cook on high for 4 hours or low for 6 hours
4. An hour and a half before serving, add your risotto and the rest of the chicken stock and cook on high for an hour and a half. 5. If you can, stir every 30 an hour just to make sure it’s cooked evenly and feel free to add some more stock if you wanted it a bit looser
6. Once the risotto has cooked, add in the creme fraiche and spinach and leave for a few minutes until the spinach has wilted to serve
For 4 people you'll need:
6x Porky Whites Nduja-inspired Premium Pork Sausages
2x red peppers diced
1x white onion diced
1x large courgette diced
1/2 285g jar of sun-dried tomatoes
2 tablespoon mixed herbs
1 heaped tablespoon lazy garlic
2 teaspoon Cajun seasoning
150g dry risotto
750ml chicken stock
2 tablespoon light crème fraiche
2 large handfuls spinach
