Quick and easy one pan recipes always go down well when you’re managing a busy family. This recipe pulls together a few simple ingredients, is ready to take to the table in less than 30 minutes and I promise the result is a knockout dinner. I’ve used my favourite Porky Whites Traditional Sausages, orzo and broccoli which are all cooked in a deliciously fragrant tomato sauce. It’s a meal my boys request time and time again. I hope you enjoy it!
Squeeze the meat out of their skins and make 3 balls from each sausage. Add the olive oil to a large pan and add the sausage balls. Cook for 5 minutes until they have browned. Add the onion, paprika and fennel seeds and cook for 5 minutes. Pour in the wine and tomatoes, let it bubble for a minute, then add the orzo. Give everything a stir. Add the chicken stock. Let the mixture simmer for 6 minutes, stirring every minute or two. Add more water if the orzo absorbs all the liquid. Add the broccoli and put a lid on the pan. Let it cook for 10 minutes, then sprinkle with parmesan and fresh basil leaves before serving.

1 onion chopped
1 tsp ground fennel seeds
1 tsp smoked paprika
100ml red wine
320g orzo
400g chopped tomatoes
500ml chicken stock
300g tender stem broccoli
2 tbsp grated parmesan
Fresh basil leaves
