Sausage and butter bean cassoulet

This tomatoey casserole is the perfect winter warmer. Delicious with crunchy baked potatoes and grated cheese

Method

This recipe comes from Porky Lights fan Jan Stewart of Rothes, Scotland.

“This recipe is a firm family favourite and so easy to prepare,” writes Jan. “I’ve been a Slimming World member for 2½ years and I'm always on the lookout for new products that are tasty and help me stay on plan. Your Porky Lights sausages tick all the boxes. They’re low in calories and low in fat but deliciously meaty and go so well with the smoked paprika – it’s a perfect combination!

Then just brown the sausages in an ovenproof pan or casserole dish. Simply add in all the other ingredients and pop into the oven at 180ºC for 1½ hours. It’s as easy as that – and so tasty!”

Ingredients

6 Porky Lights sausages

2 onions, diced

2 peppers, diced

2 carrots, diced

1 tin of baked beans

1 carton of passata

1 tin of chopped tomatoes

8 mushrooms, sliced

1 tablespoon paprika

1 teaspoon smoked paprika

2 cloves garlic, crushed

2 tablespoons Worcestershire Sauce

A sprig of fresh thyme

Salt and pepper
