If you love sausage and mash this is for you! The sauce that this is cooked in is amazing as all the fat and juices from the sausages come out to flavour it, 2 of your 5 a day, cheesy mash and a warming nourishing meal that’s high in protein- just perfect.
1. Start by slicing your sausage and browning this off in a pan
2. Add the sausages and their juices to the slow cooker along with the carrots, onions, tomato puree, chicken stock, mixed herbs and garlic granules. Add salt and pepper to season too
3. Leave on high for 4 hours or low for 7- For the mash, boil your potatoes until soft then add in 2 tablespoons of light crème fraiche, a sprinkle of garlic granules and salt and pepper
4. Spread the mash on top of your sausage mix and top with mozzarella
5. Place under the grill for 9-12 minutes
For 2 people you'll need:
6x Porky Lights Sausages, sliced
2x large carrots, diced - you could use frozen
1x large onion diced - you could use 1 and 1/4 cup of frozen diced onions
2x tablespoon tomato puree
2x tablespoon Worcestershire sauce
1x tablespoon garlic granules
2x tablespoon mixed herbs
600ml chicken stock
3-4 tablespoons of gravy granules to thicken
650g potatoes
2 tablespoons light crème fraiche
1 handful grated mozzarella or cheddar
