1. Remove the skins from the sausages and fry in a pan with the diced onion, breaking up the sausages into chunks
2. Add the garlic, Sundried tomato paste, herbs, paprika, pepper & stock
3. Simmer until the stock has slightly reduced
4. Stir in the soft cheese and half of the grated cheese until melted
5. Add the baby spinach, cooked pasta, pasta water and simmer for 3 minutes
6. Serve with the remaining grated cheese
