Meet our Marry Me Sausage Lasagne. Rustic, hearty and bursting with flavour, Porky Whites Farmhouse Sausages are the perfect base for our sauce. Once the sausages are cooked in sizzling nuggets, then start layering in the umami factor of the Marry Me sauce - sun-dried tomatoes with showers of Parmesan and spinach. Smashed lasagne sheets are cooked in the sauce to make this a nifty one pan dish. Finished with mozzarella and grilled until golden and bubbling.
Prep the ingredients
Peel and chop the onion. If your sun-dried tomatoes are large you can chop them.
Make the Marry Me sauce
Heat the oil in a large ovenproof frying pan on a medium heat, then cook the onion with a pinch of salt and pepper for 3minutes. You can also use some of the oil from the sun-dried tomatoes jar to add extra flavour.
Remove the skin from the sausages and add the sausage meat to the pan, breaking it up with the back of a spoon into juicy nuggets as it cooks. Cook for 7 minutes then add the garlic granules and dried oregano (you can remove some of the excess oil in the pan if you like).
Pour in a generous dash of the chicken stock, then with the back of a spoon scrape the bottom of the pan to get all the delicious sausage flavour.
Add the rest of the stock with the sun-dried tomatoes, chopped tomatoes and crème fraîche. Check the seasoning and adjust to taste with salt and pepper.
Add the lasagna sheets
Break each lasagne sheet into around 4 - 5pieces, stirring them into the sauce, ensuring they are submerged in liquid.
Stir in ⅓ of the grated Parmesan and the spinach. Cover with a lid or foil and simmer for 10 minutes, stirringoccasionally, until the pasta is tender.
Heat the grill & finish the sauce
Preheat the grill to high.
Sprinkle over the mozzarella and reservedParmesan.
Pop the pan under the grill for 3-5 minutes, oruntil golden and bubbling.
Plate Up
Remove the pan from the oven and let it sit fora few minutes. Scatter over the fresh basil, then plate up your Marry MeLasagne and enjoy!

1 x 400g tin chopped tomatoes
100g crème fraîche
6 - 8 lasagne sheets
60g Parmesan, grated
Handful spinach
150g mozzarella, grated
Handful fresh basil
Salt and pepper, to taste
