So the summer holidays are nearly over. Gosh they’re long aren’t they?! I always feel bitter sweet about this time of the year. It’s been lovely having everyone home but I think we’re all craving a bit of routine and a reduction in the constant kitchen carnage that seems to occur every time a child is peckish!
If you’re running out of inspiration for a minimal effort lunch or dinner that will stop the children asking about their next meal 15 minutes after you’ve just cleared away, these Cajun Style Sausage Baps could be the answer to your prayers.

This is the second recipe I have created as an ambassador for my favourite sausage brand, Porky Whites.
Simply the tastiest sausages, only the finest cuts of pork belly and shoulder go into a Porky Whites sausage, and almost all the meat sourced for their sausages comes from within the UK (with some additional supplies coming from trusted EU farms to make up any shortfall of UK supplies). Porky White always ensure that animal welfare is a priority too.
Combine all the ingredients in a roasting tin.
Roast for 40 minutes at 180°c turning the ingredients once during the cooking time.
Load into baps with a spoonful of sour cream
6 Porky Whites Surrey Sausages
1 tbsp olive oil
1 tbsp balsamic vinegar
2 tbsp Cajun spice mix (see below to make your own)
2 tbsp olive oil
2 onions, quartered
3 cloves of garlic, crushed
2 peppers, cut into strips
100g cherry tomatoes
Bread
Rolls and sour cream to serve
Homemade Cajun Spice Mix
1 tsp paprika
1 tsp dried oregano
1 tsp dried thyme
Half tsp ground black pepper
Half tsp cayenne pepper
Quarter tsp chilli flakes
Quarter tsp sea salt
